Mom's Salisbury steak

I've made this recipe since the 70's and it's still a family favorite after all these years.  Serve it with mashed potatoes, corn, hot rolls and coleslaw and it's comfort food at it's finest.  

1 (10 1/2 ounce) can Campbell's Condensed Golden Mushroom Soup, divided, you only use 1/4 cup in the Salisbury steak, the rest you. mix with water for the gravy.

1 1⁄2 lbs ground round - I used chuck

1 ⁄2 cup plain dry breadcrumbs

1 large egg, beaten

1 ⁄2 cup chopped onion

salt and pepper

garlic powder - about 1/2 tsp.

1 ⁄3 cup water

Steps

Sauce onion in a tablespoon of olive oil until soft.  If you omit this step they can be crunchy

Combine 1/4 cup of the can of soup with ground beef, bread crumbs, egg, onion, salt, pepper, and garlic salt; mix well.

Shape into 6 patties.

Place in shallow baking dish.  I line with parchment paper for easy cleanup. 

Bake at 350 degrees for 30 minutes.

Drain off fat, if needed

Combine remaining soup and the 1/3 cup water; pour over patties.

Bake an additional 10 minutes or until thoroughly heated.

Notes

We like a lot of gravy so I use an additional can of Golden Mushroom Soup, not listed above.  I add 1/3 cup water to the soup, warm it in a saucepan and pour over the potatoes when we serve it.


Ultimate Diamond Burger Cheeseburger Party Buns

This recipe has been all over FaceBook.  The prep reminds me of Hammie Sammie’s, which were such a big hit last year.

1 pound lean ground beef
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon mustard powder
½ teaspoon smoked paprika
2 cups diced onion
3 – 4 cloves garlic, minced
1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
12 slices cheddar cheese, and 12 Hawaiian dinner rolls

Glaze:

1/2 cup butter
2 Tablespoons Brown Sugar
1 Tablespoon Worcestershire Sauce
1 Tablespoon Mustard
1 Tablespoon Sesame Seeds 

Preheat oven to 350 and spray a 9x13 baking dish with Pam.

Brown beef, salt, pepper, cumin, mustard powder and paprika.  Add garlic at last so it doesn’t burn.  Then stir in drained Rotel Tomatoes

Place half of buns in the prepared pans, add the beef, then the cheese slices and top with other half of bun.

For glaze, mix all ingredients in a saucepan over medium heat until melted.  Pour over buns and bake for 25 minutes uncovered.

Ernest Hemingway's Favorite Burger Recipe

“Papa’s Favorite Hamburger” (referring to Hemingway’s nickname) calls for nine ingredients to be mixed into lean ground beef — including Spice Islands mei yen power, soy sauce, garlic, India relish, capers and wine — before forming it into “fat, juicy patties” and frying them in oil so the final product is crispy brown on all sides and “the middle pink and juicy.”

You’ll see hand-written notes all over the recipe, including one calling for grated cheddar to be added to the patty blend.

The author’s hamburger recipe was just released by the John F. Kennedy Presidential Library’s Hemingway Letters Project.

Campbell’s Soup Frosted Meatloaf

A few years ago, my friend Veronica and I went to lunch at Red Geranium Restaurant in New Harmony, Indiana.

We were both dieting, as usual, and we ordered some silly rabbit food, and then we both positively salivated when the ladies at the next table were served thick pie shaped wedges of this wonderful meatloaf frosted with mashed potatoes.  We were just drooling!

Veronica was able to obtain the recipe from a friend, but now that dish is no longer on the menu and we have both regretted not eating it.  But we are going to make it, and when we do, we’re going to enjoy every delicious morsel of it and take pictures to document that we finally got to taste it.

The moral of this story, if you’re out with a girlfriend, forget the calories, if you really want something, just eat it!

Barb’s Amazing Creole Burgers

My friend, Barb was telling me earlier this week about Creole Burgers.  When she was a little girl there was a local drive-in called the Sani-Cream and they served these burgers.  When they closed, the owner gave her dad the recipe, and her family has made them ever since.

You all know about how crazy we are about my Sloppy Joes, and the Creole Burgers are, for me, a new twist on an old favorite.  I thought they were amazing, and I’ll make them again and again.  She couldn’t remember exactly how much ketchup and mustard to use, she just tastes it and knows when it’s right.  Since I had nothing to gauge them by, I found a recipe online, altered it a bit, and think it’s really close to what she makes.  Hope you all enjoy these as much as we do.

1 lb. ground beef
1 onion, chopped
1 can of Campbell’s Chicken Gumbo Soup
4-5 tablespoons Heinz Ketchup
3 tablespoons mustard, I use Plochmann’s because it’s my favorite
2-3 tablespoons Worcestershire sauce
1/2 teaspoon of pepper
salt to taste

Brown hamburger and onions breaking it up and crumble as it cooks, drain, add soup and condiments and simmer 15-20 minutes.  It thickens as it cooks.

So easy, and SO good!

Note:  I added salt very sparingly as the soup gives you a salty base to begin with, next time I think I will sprinkle the hamburger with Tony Chachere’s Creole Seasoning when I brown it.

Mom’s Sloppy Joes

I’ve made this recipe for Sloppy Joes for thirty+ years now.  It’s just the BEST! It’s our Halloween favorite, and an annual tradition with our family; Sloppy Joes and potato chips every Halloween evening.  It’s one of the classic recipes that you just don’t mess with.  It’s perfect just the way it is…

1 lb. ground beef
1 onion, chopped
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 Tablespoon white vinegar
2 heaping Tablespoons brown sugar
1 Cup Heinz Ketchup
1/4 cup water (if you double the recipe, don't double the water, just use 1/4 cup, it's perfect)
Cayenne Pepper to taste

Brown meat and onion, season with salt, pepper and cayenne pepper.

Drain, add remaining ingredients and simmer uncovered for 30 minutes.  If mixture gets too thick, add a bit more water. 

Note:  I usually double this recipe.  When the boys were little, they loved Velveeta Cheese melted on the top of the sloppy joes.  I would put the joes on the bun, top with the cheese, leave the top bun off, and nuke it until the cheese melted.  Velveeta is so “not cool” these days, but for some things it will always be the best!

1 egg

3/4 cup milk

1 cup (4 ounces) shredded mild cheddar cheese

1/2 cup quick-cooking oats

1/2 cup chopped onion

1 tsp. salt

1 # lean ground beef

2/3 cup ketchup

1/2 cup packed brown sugar

1 1/2  tsp. mustard

In bowl, beat the egg and milk. Stir in cheese, oats, onion, and salt. Add beef and mix well. Shape into 8 loaves; place in a greased 9x13 pan or baking dish. Combine ketchup, brown sugar, and mustard; spoon over loaves. Bake, uncovered, at 350 for 45 minutes or until the meat is no longer pink or 160.
